   Salmon Pasta  (serves 3-4)
 

Ingredients:

  • 2 Onions, Chopped
  • 5ml Cooking Oil
  • 200g Smoked Norwegian Salmon
  • 250g Potabellini mushrooms
  • 1ml Lemon Pepper
  • 2ml Rosemary
  • 4 TBS Lemon Juice
  • Salt to taste
  • 100ml dry white wine
  • 250ml Cream
  • 1/2 cup chopped coriander


Method:

  1. Fry the onions in the cooking oil until soft and then add the wine and allow to reduce.
  2. Slice the mushrooms and add them to the  onions.
  3. Add lemon pepper, lemon juice, rosemary and salt.
  4. Stir in the coriander and cream and allow to simmer for +- 2 minutes.
  5. Cut the salmon into small slices or strips and stir into the cream - allow to     cook for 3-4 minutes.
  6. Serve with Fusili pasta (pasta screws)
