Moist Chocolate Cupcakes (makes 12)

Ingredients:

  • 1/2 cup Cocoa (I used NOMU cocoa)
  • 1 cup flour
  • 1 cup sugar
  • 1tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 1/2 cup warm water
  • 1/2 cup buttermilk
  • 1/4 cup canola oil
  • 1/2 tsp vanilla extract

Method:

  1. Preheat oven to 180° and line cupcake trays with cupcake liners.
  2. Sift cocoa, flour, sugar, baking soda, baking powder and salt into a bowl.
  3. Add the egg, water, buttermilk, oil and vanilla extract and mix with an electric beater for +- 3 minutes.
  4. Using a 1/3 cup measure, scoop mixture into prepared cupcake trays.

Baking Time:
180° for 18-20 minutes (to test if ready: prick cupcake with a toothpick and if it comes out clean with no mixture on, then take the cupcakes out the oven). Cool for at least 30 minutes before icing.
