Cup Cakes (makes 18 large/30 small)

Ingredients:
70g Margarine
125g Castor Sugar and Brown Sugar mixed together
2 Eggs
260g plain flour
7g Baking Powder
200ml Milk
5ml Vanilla Essence
Pinch of Salt

Method:
Cream 70g Stork and 125g (Castor Sugar and Brown Sugar). Add 2 eggs beating well after each addition. In a seperate bowl, sift 260g plain flour with 7g Baking Powder and a pinch of salt. Combine 200ml of milk and 5ml vanilla essence in a jug. Now, add the milk and flour alternately to the egg mixture, mixing well after each addition.

Place paper cups into muffin tin and fill each cup 3/4 full.

Baking Time:
Set oven at 180°C and bake for 15 min in the centre of the oven

Icing:
Cream toegther 125g Margarine and 125g Icing Sugar. Add 2 Tablespoons of milk and mix well. Add cocoa or colourant for flavouring.
