Cake Pops
Picture and recipe courtesy of Bakerella

Cake pops are bite-size balls made of crumbled cake mixed with icing and covered in chocolate. They are easy to make and are the perfect treat for party favours and gifts.

Ingredients:

  • Shop bought cake mix
  • Baking tin
  • Large mixing bowl
  • 2 cups ready-made or plastic icing
  • Large metal spoon
  • Wax paper
  • 2 baking trays
  • Plastic wrap
  • 1300g chocolate
  • Deep plastic microwave safe bowl
  • 48 paper lollipop sticks
  • Styrofoam block

Method:

  1. Bake the cake as directed on the box, let it cool completely.
  2. Crumble the cooled cake into the mixing bowl
  3. Add three-quarters of the volume of plastic icing into the crumbled cake and mix thoroughly until combined
  4. Roll the mixture into 3.5cm balls, place each ball onto the waxed paper covered baking tray
  5. Cover the balls with plastic wrap and refrigerate for several hours
  6. Place the chocolate into the deep plastic bowl and gradually melt it in the microwave, stirring regularly
  7. Take a few cake balls out of the fridge at a time
  8. Dip about 1.5 cm of one end of a lollipop stick into the chocolate then insert that end into a cake ball.
  9. Holding the lollipop stick with the cake ball attached, dip the entire cake ball into the melted chocolate.
  10. Place the finished cake pop, lollipop stick side down into the Styrofoam block
  11. Repeat with the remaining cake balls.
