Baby marrow & almond fritters

Ingredients:

  • 9 small baby marrow, grated
  • ½ tsp malton salt
  • 3 clove garlic, crushed or finely chopped
  • Zest of 1 lemon
  • 50 g roasted almonds, chopped
  • 90g plain flour
  • 1 egg, lightly beaten
  • 3 tbsp flat leaf parsley, chopped

Method:

  1. Mix grated baby marrow with roasted,chopped almonds
  2. Add garlic, Lemon zest & Salt
  3. Set aside for 20 min & allow salt to draw the juices
  4. Add flour and egg to the mixture to form a batter
  5. Heat heavy based pan
  6. Fry spoonfuls of batter in hot oil until well browned
  7. Drain on a paper towel to take off extra oil
  8. Serve with plain Greek yoghurt
