Baby marrow & almond fritters

Ingredients:

9 small baby marrow,
grated
½ tsp malton salt
3 clove garlic, crushed and finely chopped
Zest of 1 lemon
50 g roasted almonds, chopped
90g plain flour
1 egg, lightly beaten
3 tbsp flat leaf parsley, chopped


Method:

Mix grated baby marrow with roasted & chopped almonds add crushed & chopped garlic, Lemon zest & Salt Set aside for 20 min & allow salt to draw the juices Add flour and egg to mixture & form batter Heat heavy based pan Fry spoonfuls of batter in hot oil until well browned Drain on paper towel to take off extra oil Serve with plain Greek yoghurt
