Seared Mussels with Vanilla Sauce

Ingredients:

1 kg fresh mussels
1 clove of garlic finely chopped
˝ cup butter
˝ teaspoon pure VANILLA EXTRACT (supplied by the Vanilla Man)
1 cup cream
1kg angel hair pasta, cooked
2 tablespoon finely chopped onion
chopped parsley for garnish


Method:

1. Melt butter in a deep frying pan.
2. Add mussels and cook until just done, about one minute per side.
3. Remove from pan, and keep warm.
4. Add onion and garlic o the pan and sauté 2 minutes.
5. Add cream and vanilla. Cook and stir over medium heat until slightly thickened.
6. Add mussels back to the pan and stir.
7. Serve over pasta.
8. Sprinkle with fresh parsley
.
