Pumpkin Fritters

Ingredients:

  • 4 cups cooked pumpkin, mashed
  • 2 eggs
  • 1 cup flour
  • pinch of salt
  • 5ml (1 teaspoon) baking powder
  • 30 ml (2 tablespoons) heaped of sugar

Method:

  1. Combine all ingredients, making a soft batter
  2. Fry spoonfuls in shallow oil till both sides are lightly browned.
  3. Drain on paper and serve warm with cinnamon sugar.

Cinnamon Sugar:

  1. 30g ground cinnamon and mix with 180g of sugar.
  2. Sprinkle over pancakes to taste.
