Lemon Slices

Crust:

  • 120 ml Butter/marg
  • 62 ml Icing sugar
  • 250 ml Flour
  1. Mix all together well and press into 20 x 20 cm square tin and bake at 180 degrees for 20 mins until pale.
  2. While crust is baking make filling.

Filling:

  • Juice and rind of 1 lemon (+- 30 ml)
  • 25 ml Flour
  • 250 ml Sugar
  • 2 Eggs
  • 10 ml Butter
  • 1 ml Baking Powder
  1. Mix the above well and beat.
  2. Pour over cooked hot crust.
  3. Bake for 20 mins at 180'C.
  4. Sprinkle with icing sugar and leave to cool.
  5. Cut into slices when cool
