| Recipe to try: Lamb Korma by Blue Strawberry Caterers |
INGREDIENTS
1kg boneless lamb leg cubes
1 Cinnamon stick
2 Bay leaves
4 bruised cardamom pods
1 tspn chilli powder
1 cup plain yoghurt
1 tspn turmeric powder
1 tblsp garam masala
1 tblsp ground coriander
200g onions diced
2 tblsp almond and cashew nuts
1tsp garlic crushed
1tsp ginger crushed
1 cup cream

METHOD
- Line a hot frying pan with oil
- Add onion, garlic, ginger and nuts
- Fry until the colour changes to gold
- Then remove ingredients from the pan and place in a saucer on the side
- Put the yoghurt and chilli powder into the pan and blend until it becomes a fine paste
- Add to lamb and leave to marinade for an hour
- Fry cinnamon stick, bay leaves and cardamom in a pot until it starts to smoke, then add the rest of the spices cook until spices begin to stick to the bottom of the pot
- Now, add your marinated lamb and bring the mixture to the boil
- Lower the temperature of the pot and simmer with lid on until lamb cubes are tender
- Add cream
- Serve with basmati rice and a fresh dollop of plain yoghurt.

How do I know that the product that I am buying is definitely organic? |

Organic products are generally branded as organic by their packaging. There should be a certification number or accreditation body logo on the label of the product. All genuine organic farmers are certified and accredited by a regulatory body. Some stores signal organic produce with an icon of sorts on the packaging and this icon will differ from store to store. There are also other indications such as finding living organisms in your leafy vegetables; this means that your produce was farmed organically. |
