3 Easy Dessert Recipes
 

A decadent dessert is a significant component of a successful dinner party; a sweet treat rounds up a nice meal perfectly and is always popular among both young and old. If you often find yourself running out of time when preparing food for guests and have no patience for complicated recipes, these three easy dessert recipes will give you perfect results every time – whether you choose to make the Peppermint Crisp Fridge Tart, the Lemon Meringue Pie or the Cheesecake.

Peppermint Crisp Fridge Tart


Ingredients:

  • 2 packets of Tennis biscuits
  • 2 sachets of Orley Whip
  • 1 tin caramel Peppermint crisp chocolate

Method:

  1. Beat the Orley Whip.
  2. Mix in the caramel.
  3. Layer the Tennis biscuits and the Orley whip mixture.
  4. Sprinkle peppermint crisp on top.
  5. Place in fridge to set.

Lemon Meringue Pie


Ingredients:

  • 22 crushed Marie biscuits
  • 60g melted margarine
  • 1 tin condensed Milk
  • 2 egg yolks
  • 2 egg whites
  • 2 tablespoons castor sugar
  • ¾ cup lemon juice

Method:

  1. Mix Marie biscuits and melted margarine together and press into dish.
  2. Mix condensed milk, egg yolks and lemon juice together. Pour over Marie biscuits.
  3. Beat 2 egg whites until stiff and add castor sugar. Mix. Pour into the dish.
  4. Bake at 180 °C for 5-10 minutes.
  5. Put in fridge to set.

Cheesecake


Ingredients:

  • Tennis biscuits
  • Butter
  • 1 x tin condensed milk
  • 1 x tub fat free cottage cheese
  • ½ cup lemon juice
  • 1 x tin youngberries or mandarins
  • 3 teaspoons sugar
  • 3 teaspoons corn flour

Method:

  1. Crush the biscuits and mix with the butter to use as a base.
  2. Mix the condensed milk, cottage cheese and lemon juice together, and pour over the biscuit base.
  3. Boil the sugar and corn flour together and cool down. Pour it over the cake.
  4. Garnish with youngberries, mandarins or anything else you might fancy.
